Pizza Pizza!

Oh, this pizza. I've made it before. (See here and here for past posts), but it only gets better and better.

Eggplant and tomato pizza with fresh mozzarella. It's a Pioneer Woman recipe and you can get it here. My only changes are instead of doing her crust, I use the canned Pillsbury crust and instead of olive oil on my eggplant, I use spray oil.

While her's looks a little "sparse" of toppings, I load on the good stuff. In my opinion, you can't have enough eggplant.
